Baked Potatoes

I'm at my parents right now and will be cooking lunch for them today. It's an easy but delicious recipe so I thought, I'd share it with you guys as well. Enjoy!








 Baked Potatoes

  • 2 Portions
  • Preparing time: 25 minutes
  • Baking time: ~ 30 minutes

Ingredients:


  • about 8 small potatoes (for 2 people)
  • olive oil
  • salt
  • pepper
  • nutmeg
  • vegetables at will to be cooked as a side dish
For the herbal dip
  • 1 pot of vegan skyr style soy-joghurt
  • 1 bunch of chives or other herb
  • 1 small onion
  • 1 clove of garlic
  • 4 table spoons of olive oil
  • 1/2 a tablespoon of vinegar
  • salt
  • pepper

Method:

  1. Scrub the potatoes and cut them in halves or quarters depending on the size.
  2. Drizzle the olive oil over the potatoes, salt and pepper them and put them in the oven at 200°C for about 30 minutes.
  3. Cut the veggies and put them in a pot. Add water until all the vegetable is covered and season the vegetable mix with salt, pepper and nutmeg. The veggies should cook for about 15 Minutes until soft.
  4. Take the Skyr Style Joghurt and put it into a bowl.
  5. Finely chop the onion, the buch of chives and the garlic clove, then add it to the joghurt.
  6. Into the joghurt stir the vinegar and oil, then add salt and pepper.
  7. The potatoes are finished, when the edges turn crispy brown.
  8. Enjoy!
