Potato stew

Today was another really warm day in Germany, but if it's not as warm at your place or there is another temperature break and you want at least to feel warm on the inside, if not on the outside, I have the right recipe for you!







Potato stew

  • 2 Portions
  • Preparing time: 10 minutes
  • Cooking time: ~ 20 minutes

Ingredients:

  • 300 g of potatoes
  • 2 carrots
  • 1/2 broccoli
  • 100 g of corn
  • 1 onion
  • 50 g of smoked tofu
  • some olive oil
  • 1 liter of vegetable broth 
  • salt 
  • pepper
  • paprika powder


Method:
  1. Cut the tofu into little cubes.
  2. Fry the tofu at medium heat.
  3. Dice the veggies, the onion and the potatoes.
  4. After the tofu is finished, put it aside and fry the onion in the olive oil and season it with some paprika powder.
  5. Stir in the veggies, potatoes, tofu and vegetable broth and let it cook for about 15 minutes. 
  6. Season the stew with salt, pepper and paprika powder.
  7. Bon appétit!
