Vegan Quiche

I want to share another of our favourite vegan recipes with you. The vegan Quiche is very quickly satisfying, so if you have a huge appetite like me, that's just the thing!








Vegan Quiche

  • 4 Portions
  • Preparing time: 45 minutes
  • Baking time: ~ 45 minutes

Ingredients:


For the dough
  • 330 g of whole grain wheat flour
  • 150 g of vegan margerine
  • 80 ml of water
  • 1/2 a teaspoon of sea salt
For the filling
  • 400 g of silken tofu
  • 400 g of cherry tomatoes
  • 2 tablespoons of olive oil
  • 2 tablespoons of cornflour
  • 1 teaspoon of sea salt
  • 1 teaspoon of curcuma
  • a pinch of nutmeg
  • some pepper
  • some herbs (f.e. thyme or basil)


Method:
  1. Prepare the dough by mixing all listed ingredients for this purpose until it is smooth.
  2. Let the dough rest in the fridge for about 30 minutes.
  3. In the mean time wash and half the tomatoes.
  4. Blend the silken tofu together with the olive oil, the cornflour and the spices.
  5. Chop the herbs and mix them into the blended tofu.
  6. Roll out the dough on a baking sheet and form a rind. Then prebake the bottom of the quiche for 10 minutes at 200°C.
  7. Spread the filling evenly onto the dough and distribute the tomatoe halfs, so that the skin is at the bottom and can't soften the quiche.
  8. Bake the quiche for 20 minutes at 200°C and for another 15 minutes at 175°C.
  9. Let the quiche cool down for about 10 minutes.
  10. Tuck in!
