Vegan Quiche
I
want to share another of our favourite vegan recipes with you. The
vegan Quiche is very quickly satisfying, so if you have a huge appetite
like me, that's just the thing!

- 4 Portions
- Preparing time: 45 minutes
- Baking time: ~ 45 minutes
Ingredients:
For the dough
- 330 g of whole grain wheat flour
- 150 g of vegan margerine
- 80 ml of water
- 1/2 a teaspoon of sea salt
- 400 g of silken tofu
- 400 g of cherry tomatoes
- 2 tablespoons of olive oil
- 2 tablespoons of cornflour
- 1 teaspoon of sea salt
- 1 teaspoon of curcuma
- a pinch of nutmeg
- some pepper
- some herbs (f.e. thyme or basil)
Method:
- Prepare the dough by mixing all listed ingredients for this purpose until it is smooth.
- Let the dough rest in the fridge for about 30 minutes.
- In the mean time wash and half the tomatoes.
- Blend the silken tofu together with the olive oil, the cornflour and the spices.
- Chop the herbs and mix them into the blended tofu.
- Roll out the dough on a baking sheet and form a rind. Then prebake the bottom of the quiche for 10 minutes at 200°C.
- Spread the filling evenly onto the dough and distribute the tomatoe halfs, so that the skin is at the bottom and can't soften the quiche.
- Bake the quiche for 20 minutes at 200°C and for another 15 minutes at 175°C.
- Let the quiche cool down for about 10 minutes.
- Tuck in!
