Innovative vegan sauce
The reason I like this recipe so much, is the creativity behind it. On my own, I would have never tried this recipe as sauce for noodles, because it's actually like a carrot soup (as soup it's delicious as well), but now it's one of my favourite meals. It's also really quick to make, so enjoy!
Carrot sauce
- Preparing time: 10 minutes
- Cooking time: ~ 10 minutes
Ingredients:
- 1 onion
- a chunk of ginger (about 2 cm)
- 1 carrot
- a piece of zucchini (also about 2 cm)
- coconut milk
- salt
- pepper
- paprika powder
- oil
Method:
- Chop the onion and fry it in oil for about 2 minutes
- Add the chopped ginger, carrots and zucchini and let all of that fry for another 3 minutes
- Pour in the coconut milk and season the mixture
- Let it simmer for about 5 minutes
- Mix all the ingredients in a blender
- Enjoy with noodles/ rice/ anything else :)
